Capsaicin

Capsaicin is responsible for the spicy taste of chili peppers and other Capsicum species. Capsaicin stimulates TRPV1 receptors on the tongue, which are involved in the sensation of heat and pain. This activation results in a burning sensation, which explains the well-known “spice” of peppers. However, long-term exposure to capsaicin leads to desensitization of TRPV1 receptors, which reduces pain signals.
